Children from years 1-3 at St Johns have been taking part in weekly after school cooking lessons. The children in the group have been focusing on developing and extending their cooking skills week on week. We have also supported the children to work together co-operatively as a kitchen team to produce a range of baked goods which they were then able to share with their families. To celebrate the end of the sessions we made healthy American pancakes with grated apple and fruit toppings.

American style one cup pancakes
(makes around 4- depending on their size- if you need more just double the recipe!)

1 large free range egg

1 cup self raising flour

1 cup of milk (oat milk works well as a lactose free alternative)

1 apple (grated)

sea salt
Combine all the ingredients but the apple in a bowl and whisk until smooth and well mixed batter. Add the grated apple. Use a ladle to add batter to frying pan, cook, flip over, then cook some more!
Enjoy with yoghurt and fruit toppings.
